In food and beverage processing, the sanitary screw pump (progressive cavity) is the choice for conveying viscous, particle-laden, and shear-sensitive fluids while preserving product structure. The eccentric rotating helical rotor inside a rubber stator creates a smooth, steady, low-pulsation, low-shear flow — suitable for creams, sauces, jams, and minced meat. When EHEDG/3A hygienic standards and in-place cleaning via CIP/SIP are required, sanitary-design ranges such as the Nova Rotors DX-JX and sanitary twin-screw pump are solutions that meet food safety requirements.

Quick Summary
  • Screw pump = positive displacement pump, flow rate proportional to speed, LOW PULSATION
  • LOW SHEAR → preserves structure of cream, sauces, jams, minced meat
  • Handles high-viscosity fluids and fluids containing solids/fibres, self-priming, reversible
  • Sanitary range meets EHEDG/3A, CIP/SIP cleanable, smooth surfaces easy to clean
  • Stator is the wear part — DO NOT run dry to avoid burning the stator

Why Screw Pumps Are Suited for Shear-Sensitive Food Fluids

01

Progressive Cavity Working Principle and Low-Shear Advantage

The eccentric screw pump (progressive cavity, also called cavity pump) is a single-shaft positive displacement pump. The single-lobe helical rotor rotates eccentrically inside a double-lobe rubber stator, creating sealed cavities (pockets) that move steadily along the pump axis. This mechanism produces a stable flow rate directly proportional to rotational speed, with virtually no pressure pulsation.

For food applications, the key attribute is low shear force. The fluid travels within sealed cavities rather than being battered by high-speed impellers as in a centrifugal pump, so product structure is preserved: jam pieces remain intact, sauce emulsions do not separate, and minced meat fibres are not torn apart. The pump also handles high-viscosity fluids and fluids containing solid particles or fibres effectively, with the ability to self-prime and reverse direction for back-suction when needed.

Criterion Screw Pump (PC) Centrifugal Pump AODD Diaphragm Pump
Shear Force Low High Medium
Flow Rate Stability Steady, low pulsation Steady for thin fluids Pulsating (air-cycle dependent)
High-viscosity / particle-laden fluids Suitable Limited Reasonably suitable
Product Structure Preservation Good Poor Medium

EHEDG/3A Hygienic Standards and CIP/SIP Cleaning

02

Sanitary Design to Eliminate Bacterial Accumulation Points

In food and beverage plants, product-contact equipment must meet hygienic standards to ensure safety. EHEDG (European Hygienic Engineering & Design Group) and 3-A Sanitary Standards are two widely adopted sets of design criteria aimed at eliminating dead zones, crevices, and rough surfaces — areas where microorganisms accumulate easily and are difficult to clean.

Sanitary-design pumps feature smooth product-contact surfaces, food-grade stainless steel materials, appropriate seals, and a construction that allows easy disassembly. More importantly, this design is compatible with CIP (Cleaning In Place) and SIP (Sterilization In Place) processes, enabling cleaning solutions and sterilizing steam to reach all internal surfaces without removing the pump from the production line.

Nova Rotors Ranges for Food and Beverage

03

DX-JX Sanitary and Twin-Screw Pump for High-Viscosity Fluids

Nova Rotors (Italy) offers several eccentric screw pump ranges for the food industry. The Diamond DX-JX series features sanitary design meeting EHEDG/3A standards with CIP/SIP compatibility — suitable for pumping shear-sensitive fluids requiring structural preservation and high hygienic safety. Also available is the HE hopper-style range with trolley for food and wine applications.

For fluids with very high viscosity, the sanitary twin-screw pump range handles products at very high viscosity levels with corresponding pressure ratings depending on configuration. When precise sanitary metering is needed for cream, sauces, gel, or honey, the DM metering range delivers a flow rate proportional to speed, ideal for filling and blending operations.

Operation and Maintenance Notes

04

Avoiding Dry Running and Managing Wear Parts

The rotor–stator pair is the contact surface and wears over time. The critical rule is to NEVER allow the pump to run dry: without lubricating fluid, friction between the rotor and stator generates heat and burns the rubber stator. Therefore, a level sensor or dry-run protection device should be installed for applications prone to fluid depletion.

The rubber stator material (NBR, EPDM, Viton) is selected according to the fluid type and operating temperature; for CIP/SIP applications, resistance to cleaning chemicals and hot steam must be considered. The stator and rotor are scheduled replacement items — having spare parts ready reduces downtime. Thanks to their easy-disassembly construction, sanitary-range pumps allow rapid inspection and cleaning between production batches.

Frequently Asked Questions

How does a sanitary screw pump differ from a centrifugal pump for food fluids?

+

A screw pump is a positive displacement pump that generates a steady flow with low shear force, preserving the structure of creams, sauces, jams, and minced meat. A centrifugal pump uses a high-speed rotating impeller, generating high shear force that can easily break emulsions or crush particles — more suitable for thin fluids than for viscous, shear-sensitive products.

What are EHEDG and 3A, and why do they matter for food pumps?

+

EHEDG and 3-A are sets of hygienic design criteria for food-contact equipment, aimed at eliminating dead zones and hard-to-clean surfaces where microorganisms accumulate. Pumps meeting these standards help ensure food safety and facilitate hygiene control.

Can CIP/SIP clean the inside of the pump?

+

Yes. Sanitary-design pumps such as the Nova Rotors DX-JX are built so that CIP cleaning solutions and SIP sterilizing steam can reach all product-contact surfaces, thanks to smooth construction with minimal crevices, enabling in-place cleaning without removing the pump from the production line.

Can a screw pump handle very high-viscosity fluids?

+

Yes. The Diamond range handles very high-viscosity fluids, and Nova Rotors’ sanitary twin-screw range reaches up to 1,000,000 cps at pressures ≤25 bar — suitable for thick products such as concentrated sauces, cream, and gel in food processing.

Why must a screw pump never run dry?

+

The rubber stator requires the pumped fluid for lubrication and cooling. Running dry causes rapid heat build-up from friction between the rotor and stator, burning the stator. Dry-run protection or a level sensor should be installed for applications prone to fluid depletion.

What stator material should be selected for food applications?

+

The rubber stator is selected based on fluid type, operating temperature, and CIP/SIP chemicals — common materials are NBR, EPDM, and Viton. For food applications, the material must meet food-contact standards and withstand cleaning conditions. TKT provides support for configuration selection for each fluid type.
